Fast-Casual Franchise Brand Opens Second Location in State through Multi-Unit Development Deal
FAYETTEVILLE, Ark. — Slim Chickens, a leader in the “better chicken” segment of fast-casual restaurants, will be expanding its fresh chicken and unrivaled flavor to the Pine Lake neighborhood of Lincoln, Nebraska. The expansion is spearheaded by restaurant veterans and local franchisees Bill and Stacie Hooks. This is the second location for the husband-and-wife duo, who opened the state’s debut location in Old Cheney earlier this year.
Located at 1601 Pine Lake Rd. in Lincoln, the restaurant is scheduled to open April 13, 2015 with a ribbon-cutting ceremony at 10:30 a.m. This is the second of five locations the Hooks plan on opening in the Cornhusker State.

Bill Hooks joined Slim Chickens with a background in both food and franchising. After moving to Lincoln in 2001, he began his career at Concord Hospitality as a restaurant manager. Hooks became general manager before being promoted to training manager, and finally to director of operations. Concord Hospitality is a large restaurant group, which over the course of its existence, was the platform for 45 Applebee’s locations and four Famous Dave’s Barbecue restaurants in Kansas and Missouri. Hooks currently serves as vice president of the company, however he is operating his majority-owned Slim Chickens locations separately.
Hooks’ locations are unique in the chicken wing space in Lincoln; his restaurants have a liquor license, and of-age guests have the option of ordering beer to accompany their fresh, hand-battered chicken and homemade dipping sauces.
