Slim Chickens owner Greg McKay says that chicken is only one food the popular North State Line Avenue restaurant has bragging rights about.
And that is something to brag about when your chicken is known as “life-changing.”
“We probably have the best potato salad in Texarkana; it’s like a twice-baked potato salad, it’s not a mustard-based salad. It’s mayonnaise, and it’s phenomenal,” McKay said. “To be honest, we sell a bunch of all our sides. We have hand-breaded mushrooms, and we just recently came out with mac and cheese in March. We use several different types of cheese, and it tastes like something grandma makes.”
McKay’s enthusiasm about being the first franchisee of Slim Chickens in Texas last June in the 4200 block of North State Line has been ignited in the past year. The former home-builder now has his sights on opening another restaurant at St. Michael Drive and Cowhorn Creek Road. It could be open as soon as next summer.
“We are waiting on a permit because drainage work has to be done on the property,” McKay said. “The city is partnering with the developer and working on a partnership with the Corps of Engineers.”
