Greg McKay has his eye on Marshall to be the home of franchise restaurant Slim Chickens in the near future.
The first franchisee for the “fast casual” restaurant that opened in 2003, McKay took a leap of faith with the brand by purchasing it and opening a store in Texarkana. Now he’s set his sights for East Texas.
“I’ve been a home builder in Texarkana for 24 years and looking to do something different. I was always interested in the restaurant business and the opportunity didn’t really exist for me before,” he said. “There was no way to go out and open a restaurant on my own without the support of a franchise.”
He bought the first franchise in April 2012 and didn’t open the restaurant until June 2013. Now that it’s a success, McKay said he’s been scoping out locations that he’d think be a good fit for the chicken eatery.
