ASHLAND Slim Chickens is now officially open for business.
The fast-casual restaurant, located beside the Ashland Town Center Mall, opened its doors Monday morning after months of construction.
“We have a history of trying to bring new concepts to the town,” said restaurant owner Tom Wright, speaking about himself and his business partners, Randy and Ann Vanover.
Wright said the three also oversees several other local restaurants like Moe’s Southwest Grill, Penn Station and Sbarro. He said he also opened up another Slim Chickens in Pikeville last November.
“Normally rural areas are the last to get (newer restaurants) because they want to put them in the bigger cities because they think that’s where the volume is and we’ve proven that theory wrong,” said Wright.
Wright said he believes customers will enjoy Slim Chicken’s southern menu that includes lightly breaded chicken, chicken and waffles, sandwiches and an array of sides. Slim Chickens has been operating since 2003 and is based in Fayetteville, Ark.
Wright said 50 employees are currently on staff and estimated the number will lower to around 35 once the business is settled in.
Slim Chickens is open from 10:30 a.m. to 10 p.m., seven days a week. Its drive-thru is open until midnight.
