Slim Chickens Expands in Nebraska to Bring Better Chicken to More People in Lincoln

Fast-Casual Franchise Brand Opens Second Location in State through Multi-Unit Development Deal

FAYETTEVILLE, Ark. — Slim Chickens, a leader in the “better chicken” segment of fast-casual restaurants, will be expanding its fresh chicken and unrivaled flavor to the Pine Lake neighborhood of Lincoln, Nebraska. The expansion is spearheaded by restaurant veterans and local franchisees Bill and Stacie Hooks. This is the second location for the husband-and-wife duo, who opened the state’s debut location in Old Cheney earlier this year.

Located at 1601 Pine Lake Rd. in Lincoln, the restaurant is scheduled to open April 13, 2015 with a ribbon-cutting ceremony at 10:30 a.m. This is the second of five locations the Hooks plan on opening in the Cornhusker State.

“Bill and Stacie have done an outstanding job serving quality food and providing customer service of the highest degree to the people of Lincoln already, and we’re thrilled to bring a second location to the area in such a short period of time,” said Sam Rothschild, COO of Slim Chickens. “Nebraska has welcomed Slim Chickens with open arms, and we look forward to witnessing this location’s success.”

Bill Hooks joined Slim Chickens with a background in both food and franchising. After moving to Lincoln in 2001, he began his career at Concord Hospitality as a restaurant manager. Hooks became general manager before being promoted to training manager, and finally to director of operations. Concord Hospitality is a large restaurant group, which over the course of its existence, was the platform for 45 Applebee’s locations and four Famous Dave’s Barbecue restaurants in Kansas and Missouri. Hooks currently serves as vice president of the company, however he is operating his majority-owned Slim Chickens locations separately.

Hooks’ locations are unique in the chicken wing space in Lincoln; his restaurants have a liquor license, and of-age guests have the option of ordering beer to accompany their fresh, hand-battered chicken and homemade dipping sauces.

“I’m humbled by the tremendous response we’ve seen locally with our first Slim Chickens restaurant,” said Hooks. “We will continue to uphold the brand’s high standards and provide our neighbors with great food and a welcoming atmosphere for an exceptional dining experience.”

Focusing on fresh chicken, the brand has developed a niche in its sector of the restaurant industry for product quality that can’t be found anywhere else. With fresh ingredients and minimal freezer space in every restaurant, Slim Chickens honors a commitment to homemade recipes and strong supplier partnerships, ensuring guests can feel good about the food they eat. The down-home Southern brand offers diners hand-breaded or grilled chicken tenders, paired with a choice of eight handmade dipping sauces or seven handmade wing sauces for exceptional flavor, which have earned admiration from both customers and critics. If guests want to switch it up, Slim Chickens also offers fresh salads, wraps and chicken and waffles. To offset the savory side of the menu, rotating desserts served in Mason jars are available.

The 2,922-square-foot store is the prototype being used for aggressive national expansion and is one of 15 new restaurants slated to open in the next 12 months across the country. The brand has seen great success in the last several years, expanding from Arkansas into Texas, Oklahoma, Missouri and now Nebraska, and emerging as a national player to establish fast-casual dining’s “better chicken” segment.
