PRESS: Lincoln Journal Star – Fast-casual chicken restaurant coming to Lincoln

The name of a new restaurant chain coming to Lincoln likely won’t be familiar to most people, but the name behind it might be.

Bill Hooks, a local restaurant veteran and the vice president of operations for Concord Hospitality, which used to own and operate the Lincoln Applebee’s restaurants, has attained the local franchise rights for Arkansas-based chicken chain Slim Chickens. He plans to open restaurants in Lincoln and Omaha before the end of the year.

Hooks said he does not yet have a location picked out for the Lincoln restaurant but is close and expects to have a letter of intent signed within the next couple of weeks.

Hooks said that in searching for a restaurant franchise, he wanted something in the fast-casual space that would be new to the market and has “tremendous upside.”

If upside potential was based solely on ambition, Slim Chickens might have more upside than any other business. The company, whose home office is in Fayetteville, Ark., has a stated goal of 600 restaurants and $1 billion in revenue by 2025. It’s got a long way to go to get to that goal, though.
